Chicken Rice Dinner

Low Calorie Rice Dinner


Ingredients

  • 1 cup uncooked instant rice

  • 1 cup chicken broth

  • 1/2 cup chopped green pepper

  • 1/2cup chopped onion

  • 3 teaspoons olive oil

  • 1 package of cooked grilled chicken breast strips

  • 3/4 cup frozen corn, thawed

  • 3/4 cup frozen peas, thawed

  • 1 teaspoon dried basil

  • 1/2 teaspoon garlic powder

  • 1/8 teaspoon pepper


Directions

  1. Cook rice in chicken broth.

  2. In a large skillet, saute the green pepper and onion in oil for until tender. Stir in the chicken, corn, peas, and basil and garlic powder.

  3. Cook, uncovered, for 4 to 6 minutes over medium heat or until heated through.

  4. Stir in the rice and pepper.
