Low Calorie Rice Dinner
Ingredients
1 cup uncooked instant rice
1 cup chicken broth
1/2 cup chopped green pepper
1/2cup chopped onion
3 teaspoons olive oil
1 package of cooked grilled chicken breast strips
3/4 cup frozen corn, thawed
3/4 cup frozen peas, thawed
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/8 teaspoon pepper
Directions
Cook rice in chicken broth.
In a large skillet, saute the green pepper and onion in oil for until tender. Stir in the chicken, corn, peas, and basil and garlic powder.
Cook, uncovered, for 4 to 6 minutes over medium heat or until heated through.
Stir in the rice and pepper.
